BEST Sandwich (Bacon Egg Spinach Tomato)

BEST (Bacon Egg, Spinach, Tomato) My version of a Breakfast BLT


4 slices of Sourdough Bread

2 eggs

2TBSP heavy cream

6 thick slices of bacon

1  roma tomato sliced

2 cups of Spinach

Your favorite Jam or Marmalade

2 tooth picks

Lets Cook

  1. cook bacon in the skillet on medium heat for 3-5 minutes on each side. Once the bacon is cooked to your version of perfection, remove it from the skillet and let it drain on paper towel.
  2. sauté tomato slices and spinach in the remaining bacon grease. Season with salt and pepper. Once cooked, remove tomatoes and spinach from skillet and place on a plate
  3.  Pour your eggs in a greased nonstick skillet over medium heat. Cover your skillet with a lid for 30 seconds or until the egg whites are cooked and the yolk remains juicy.

(Only if you like your eggs over easy. If you're afraid of a little yolk then you are entitled to scramble your eggs. No judgement here)

For fluffy scrambled eggs whisk eggs, heavy cream and salt in a small bowl

melt 1 TBSP of butter in a nonstick skillet over medium heat, when butter starts to bubble pour whisked eggs into the skillet and turn the heat down. With a rubber spatula work the eggs from the outside in until fluffy peaks start to form. Cook for about 2- 3 minutes or until they have your desired softness.

4. Lightly toast your bread slices in the skillet in the remaining bacon grease.

(Now lets get down to business and assemble this deliciousness)

5. On one slice of bread place 3 bacon strips, 2-3 slices of tomato, spinach and finally place your egg on top. Spread your jam on the other slice of bread and top off the sandwich.

6. place your toothpick in the center of the sandwich and do a final sear in your skillet. (check for skillet to see if you need any extra oil. If so add a little olive or coconut oil to your skillet.

7. Place your BEST on your plate and slice it in half.
